Lemon and Herb Tasmania Natural Beef Topside Roast
1 kg Tasmania Natural roast
3 garlic cloves (peeled and crushed)
Grated zest of 1 lemon
2 tbsp chopped fresh oregano (1 tbsp if using dried)
100 ml olive oil
12 little new potatoes
Roasted tomatoes and asparagus to serve
Combine garlic, lemon and oregano. Make a slit lengthways in the topside and rub in the garlic mix. Rub any remaining mix over the outside of the beef.
Cover with the oil and marinate at least 1⁄2 hour (longer if time).
Place beef in an oven bag.
Place beef and potatoes in a preheated oven
(160oC) and cook for approximately 1 hour.
Remove roast when cooked to your liking and cover with foil to rest.
As the roast rests place tomatoes and asparagus in the oven for 10-15 minutes.
To serve, slice beef and serve with potatoes and roasted tomatoes and asparagus.
